2017 Sparkling Chardonnay - Pinot Noir
The grapes used for the base wine of a Sparkling wine are picked early in the harvest season, when still slightly under-ripe. Once our base wine is ready, it is taken off-site to be bottled and stored “on lees” for a minimum of five years. This wine is made using the traditional “Methode Champenoise”, but the complexity of the “riddling” and disgorging process requires specialist equipment provided by a third party. This beautiful celebration wine is perfect for enjoying with fish, duck, soft cheeses and a great Aussie BBQ.
